YIELD: Makes 6 servings
2 (about 1 1/4 lbs.) – sweet potatoes, peeled and thinly sliced
2 T – butter or margarine, melted
2 T – honey
1/2 tsp. – ground cinnamon
salt, to taste
pepper, to taste
Preheat oven to 400°F.
With veggie slicer, mandoline or food processor, thinly slice sweet potatoes.
Arrange potato slices in a single layer on a lightly oiled cookie sheet.
Combine butter and honey in a small bowl; toss the potatoes.
Bake four to five minutes per side. Sprinkle with cinnamon, salt and pepper to taste.
