ORANGE BLOSSOM HONEY MATCHA SMOOTHIE

YIELD: Makes 2 1/3 cups

INGREDIENTS

1/2 cup – dried apricots, soaked in 1 cup hot water to plump

1/4 cup – orange juice

1/2 – ripe avocado, seed and skin removed

1/2 tsp. – vanilla extract

1/4 tsp. – cinnamon

1 tsp. – Matcha green tea leaves

4 generous T -honey

1 1/2 cups – baby spinach6 small or 4 large – fresh mint leaves

2 cups – ice cubes

DIRECTIONS

Combine the apricots with the soaking liquid, orange juice, avocado, vanilla, cinnamon, Matcha, honey, spinach, mint and ice cubes in a blender container.

Blend on high for 45 seconds to 1 minute or until mixture is smooth.

Serve immediately.
